Asparagus, Onion and Parmesan Pilaf


Next time we will add more asparagus. The garlic was also added to our Veggie Burgers.

Asparagus, Onion and Parmesan Pilaf
Another simple dish inspired by The Essential Vegetarian Cookbook. In addition to the scent and the taste of basmati rice, two other characteristics distinguish the product from other forms of rice. First, the grains are longer than other types of long grain rice. Second, the grains do not tend to stick together while cooking or serving. This was our first time to try this rice and we liked it a lot.

Serves 4
1 large onion
2 garlic cloves
2 Tablespoons  butter

Chop
Mince
In large skillet, melt butter over medium heat. Add vegetables, cook and stir about 5 minutes, until soft and golden
1 cup basmati rice
2 ½ cups vegetable stock
½ teaspoon salt
Add rice, stock and salt to skillet, bring to a boil, stir once. Reduce heat, simmer uncovered for about 5 minutes or until almost all the liquid has been absorbed
1 cup fresh asparagus
Add to skillet, stir until combined. Cover pan, reduce heat. Cook for 10 minutes or until rice is tender.
¼ cup fresh parmesan cheese
¼ cup fresh parsley
Grate
Chop, fine
Stir into skillet, serve
