A delicious salad that can be made quickly, especially if you use our favorite bottled Greek dressing. You can buy this bottled dressing from farmerboygreekdressing.com if it's not available in your local grocery store. It is by far our favorite salad dressing. Pre-cooked Leftover Turkey or Chicken required |
Serves 2 | |||
1 avocado | Peel, pit and dice | |||
¼ small red onion ¼ cup celery 1 cup cucumbers 10 or 12 cherry tomatoes 1 Tablespoon fresh cilantro Dash of ground black pepper | Chop vegetables into pieces, about ¼ inch Slice thin, then quarter Slice in half Mince and combine in medium bowl | |||
¼ cup Greek dressing ½ cup (2 ounces) Feta or Goat Cheese | Add to bowl, toss lightly | |||
1 cup pre-cooked turkey or chicken | REMOVE vegetarian portion before adding poultry to bowl. Toss lightly to coat, serve over a bed of your favorite lettuce or spinach leaves | |||
