Spicy Cabbage Roll Casserole | ||
One of my cousins told me about this dish, calling it the Lazy Woman’s Cabbage Rolls, but I think it should be called the Smart Woman’s Casserole. Using the same ingredients as a cabbage roll, you just layer the ingredients and VOILA! We put our twist on it and added bulgur wheat. I always liked rice in cabbage rolls, but we like the nutrition that bulgur wheat adds to this meal. It’s rich in "B" vitamins, iron, phosphorous and manganese. | Total Time: 90 min for 2 people Serves 4 | |
Preheat oven to 400° F | | |
½ cup Bulgur wheat | Prepare as directed on package, usually 30 minutes, set aside | |
1 lb. ground beef Salt and pepper to taste | Cook over medium high heat until brown, about 10 minutes, drain excess fat, if any. | |
2 black bean burgers | Heat as directed on package, about 12 minutes. Crumble | |
1 teaspoon olive oil 2 garlic cloves 1 medium onion | In small skillet, heat olive oil over medium heat, add vegetables, cook and stir until soft, about 3 minutes Mince Chop into pieces | |
1 medium head of cabbage | Shred into large pieces, about 1” squares | |
2 cups Spicy V-8 Tomato Juice 1 can (15 ounce) tomato sauce 1 teaspoon salt Dash red pepper flakes | Place a layer of cabbage in two lightly greased casserole dishes. Top the omnivore’s portion with half of the ground beef. Place half of the crumbled black bean burgers on the cabbage in the other dish Place half of the bulgur wheat in the omnivores dish and the other half in the vegetarian’s dish. Place half of the garlic and onion mixture in each casserole dish. Pour 1 cup of tomato juice in each dish, with salt added. Repeat layering cabbage and either ground beef or black bean burger, top with ½ can of tomato sauce in each dish. | |
