Turkey and Vegetable Pasta Primavera


Vegetarian's Portion
Omnivore's Portion with rich turkey leg meat
 Turkey and Vegetable Pasta Primavera
What a great way to use your leftover turkey! The vegetarians will love this hearty meal, chocked full of healthy vegetables. You can substitute Italian seasoning for the fresh rosemary and basil, but nothing tastes better than fresh herbs. If you don’t already grow them, today’s the day to plant them.

PRECOOKED MEAT: Turkey
Total Time:
45 min for 2 people
Serves 4
6 ounces spaghetti whole wheat pasta
Cook pasta according to package directions, drain, keep warm
2 cups broccoli florets (2 small bunches)
1 cup zucchini (1 medium)
1 medium red bell pepper
1 small onion
1 cup matchstick carrots
12 fresh button mushrooms

Cut florets from stem
Cut into ¼” slices
Slice into ¼” strips
Slice into ¼” strips

Slice into ¼” slices
Place all vegetables in a steamer and steam for about 15 minutes or until crispy tender
2 cloves garlic
2 Tablespoon butter

Minced
In medium skillet melt butter over medium heat,  add garlic, cook and stir about 2 minutes
2 Tablespoons corn starch
2 cups milk
Add to skillet, briskly whisking corn starch into butter
Add milk gradually but steadily, whisking briskly
2” sprig fresh rosemary
2 leaves fresh basil
½  cup fresh Parmesan cheese
3 ounces cream cheese, softened
1 ½  teaspoons salt
¼ teaspoon black pepper

Add all ingredients to skillet, reduce heat to medium low, stir continually to prevent sticking, cook about 3 minutes, or until cheese melts and sauce boils. Make sure someone monitors the sauce at all times

Divide pasta into vegetarian’s and omnivore’s portions
Place steamed vegetables on top of pasta on each plate

Top omnivore’s plate with turkey

Ladle cheese sauce on each plate and enjoy!



Steam all your vegetables at one time. We were reluctant to steam the mushrooms, but they turned out great.
Ron makes a great sauce. When he starts cooking the sauce I prepare the rest of the ingredients so he can concentrate on keeping the sauce from sticking to the pan. The glass of wine is not part of the ingredients, but a staple in our food preparations.
We always use fresh cheese when we cook. A simple crank cheese grater was one of the best investments we made.
