I love to pick up old cookbooks at garage sales. This recipe was inspired by one of my Saturday morning scavenger hunts. The cookbook this recipe is in is Southern Living Easy Weeknight Favorites. It’s very easy to make and makes ordinary hollandaise sauce pop with the red and green confetti. This would be a great dish for your Christmas dinner table. | Total Time: 15 min Serves 4 | |
1 ½ pounds fresh asparagus | Snap off tough ends. Steam until crispy tender. About 4 – 6 minutes | |
1 package Hollandaise Sauce Mix 1 cup milk 4 Tablespoons butter | Prepare mix according to package directions | |
1 jalapeno pepper 2 Tablespoons diced or sliced pimientos 2 Tablespoons fresh Parmesan cheese | Seed and chop If using from a jar or can, drain Grate Add to Hollandaise Sauce, cook about 1 minute. Serve over warm asparagus | |
