One of our favorite meals to make ahead for lunches is our take on a recipe we saw in Bill Phillips’ Eating for Life. It looks like crap, but smells and tastes great. We always get comments when we bring this dish to work from our co-workers. The photo is taken with the meat substitute, which doesn't brown like hamburger does.
Spicy Sesame Beef Stir-Fry
½ cup uncooked *wild rice (cook as directed. Usually about 50 minutes)
1 lb. ground beef
2 meat substitute Italian Sausage Links for the vegetarian (cook and crumble)
2 Tablespoons of toasted sesame oil
5 cloves garlic, minced
3/4 cup white or yellow onion, chopped
2 cups broccoli slaw, (bagged in the produce department)
8 cups **Napa cabbage, shredded (usually two medium bunches)
2 Tablespoons Soy Sauce
Crushed Red Pepper flakes to taste
Prepare wild rice according to package instructions.
In a large deep skillet, brown the ground beef over medium heat. Drain and set aside.
In a smaller skillet, brown the meat substitute and set aside.
Heat sesame oil in the large skillet over medium high heat. Add garlic and onions and stir-fry for 3 minutes. Add the broccoli slaw and cabbage and stir-fry for 3 more minutes. Add rice and soy sauce; stir-fry for 2 more minutes.
REMOVE half the mixture and add it to the small skillet that has the meat substitute and season with red pepper flakes to taste. Stir and cook on low for about 2 minutes, until well combined.
Add the hamburger to the large skillet and stir and cook on low for 2 minutes, until well combined. Season with red pepper flakes to taste.
*Brown Rice should be the slow cooking kind. We use an organic brand that is very fragrant and flavorful.
**Napa Cabbage is tenderer than head cabbage. Even though it looks like 8 cups is a ton of cabbage, it cooks down quite a bit.
