Salmon Patties – inspired by Tyler Florence's TV show.
When Shirlee was growing up her mother fixed salmon patties and the pungent taste of the flaky fish stayed in her mind. Inspired by Tyler Florence’s Ultimate Crab Cake recipe, they have tweaked this old fashioned recipe to include fresh herbs and citrus.
3 Tbl. Olive Oil
¾ c. finely chopped sweet onion
4 cloves of garlic
1 can. Alaska Sockeye Red Salmon (bones and dark skin removed)
1 c. fresh bread crumbs from food processor. (crusts removed)
1 T Miracle Whip
1 large egg white
½ lime, juiced
2 T Fresh Cilantro (chopped, but not massacred)
¼ t Salt
Pepper to taste
Heat 1 T of olive oil over medium heat. Add onion and cook for 6 minutes. Add garlic and cook for one more minute. Dump into bowl along with salmon, bread crumbs, Miracle Whip, egg white, lime juice, cilantro and season with salt and pepper to taste. Shape into five fat patties. Put them on a plate, cover and refrigerate for one hour.
Heat 2 T of olive oil in large skillet over medium heat. Add salmon patties and cook for about 4 minutes on each side, or until nice and crisp.
Tastes great with a side of cole slaw.
NOTES: Real garlic smells so much better than the stuff in the jar. The salmon comes through and you really don’t taste the fillers at all.
