Chef Salad with Goat Cheese


Chef Salad with Goat Cheese
Twice a week we enjoy a chef salad. While chopping a variety of fresh
vegetables it gives us a chance to talk about our day and unwind. We
add tons of vegetables and top it off with almonds and roasted pumpkin seeds. We alternate the type of cheese we use. One of our favorites is goat cheese.

Total Time:
15 min for 2 people
Serves 2
Spinach or Spring Mix
Tear off stems and tear with fingers
1 stalk celery
½ small onion
¼ small zucchini
1 small cucumber
1/4 red bell pepper
8 cherry tomatoes
¼ cup matchstick carrots
8 slices pickled beets
1 hardboiled egg
1/4 cup chickpeas
Slice, about ¼”
Chop fine
Slice, about ½”, then quarter
Slice, about ¼”
Cut lengthwise, 1/4" slices
Slice in half

Slice thin
Chop
Handful slivered almonds
Handful roasted pumpkin seeds
Crumbled goat cheese
Sprinkle on top of salads
4 slices cooked ham

Slice thin and place on omnivore’s portion


Top with your favorite salad dressing. We both love Farmer Boy Restaurant’s Greek Dressing.



We had my brother for dinner and made a slightly larger salad for him. We always use small plates for us and surprisingly, get full eating this for our dinner.
