Cheese Lovers in Paradise
Or Breast Cancer Awareness Casserole

This dish is sinfully delicious. We don't make it very often and justify it by following up with salads two nights in a row. The combination of red sauce and white cheese turns this casserole pink. A perfect dish for October’s Breast Cancer Awareness Month. If you don’t want it to turn pink, layer the ingredients rather than stir.


Preheat oven to 350° F

Notes
You can use low-fat cheeses if you want to, but we like the full flavor of the real thing.
1 (8 ounce) package wide noodles
Cook as directed, drain
1 ½  pound ground beef

Seasonings to taste
In deep skillet, brown over medium heat, about 12 min
Drain excess fat, if any

1 Tablespoon olive oil
¼ cup green bell pepper
2 cloves garlic, minced
1 medium onion
Chop vegetables into pieces, about ¼ inch
Mince garlic.
In small skillet, heat olive oil over medium heat, add vegetables, cook and stir until soft, about 3 - 4 minutes

1 Tablespoon sugar
2 Tablespoons tomato paste
1 (15 ounce) can tomato sauce
1/8 teaspoon salt
1/8 teaspoon pepper
Combine in a large mixing bowl and mix in noodles.

Add bell pepper and onion mixture to bowl.
           
               


½ cup walnuts


Spray vegetable oil in two (1 ½ quart casserole dishes)
Put vegetable and noodle mixture on bottom of each dish.
Place ground beef in one of the dishes, stir

Chop, place in vegetarian dish, stir



½ cup sour cream
1 cup cottage cheese
4 ounces cream cheese
2 cups cheddar cheese (1 cup for topping)
Shred cheese.
Mix in separate bowl.
Using a spatula, spread cheese mixture on top of each casserole dish. (Spreads easier when soft)
Sprinkle remaining cheddar cheese generously on each dish.

Bake 30 min or until bubbly
